Saucy Wings in the Mud

In honor of National Wing Day, Muck has teamed up with Ricky Albright of @iron_fire_cooking to bring you one of his favorite grilled chicken wing recipes that’s as bold and messy as a day in muck boots, and 100% built for summer. This recipe packs serious flavor and pairs perfectly with a hard day's work and good company. Dig in, enjoy, and don’t be afraid to get a little dirty. 

 

Ingredients:
  • 2–3 lbs. chicken wings
  • ¼ cup Dale’s® Marinade
  • 2–3 tbsp Big Horn Bison Honey Habanero seasoning
  • 1 can (15 oz) peaches with juice
  • ½ habanero pepper, sliced
  • 2–3 garlic cloves, minced
  • 2 cups brown sugar
  • 1 cup honey (Big Horn Bison Honey preferred)
  • 1 tbsp sesame seeds (plus extra for garnish)

Instructions:

Wings:

  1. Toss wings with Dale’s® Marinade; let sit for 5–10 minutes.
  2. Add Big Horn Bison Honey Habanero seasoning, mix thoroughly.
  3. Preheat Birch Barrel (or grill) to 450°F.
  4. Grill wings for 7 minutes per side, flipping once, until 175°F internal

Sauce:

  1. Sauté garlic and sliced habanero in a saucepan.
  2. Add peaches with juice, brown sugar, and honey. Simmer 10 minutes to reduce.

 Finish:

  • Toss cooked wings with sesame seeds and warm peach-habanero sauce.
  • Top with extra sesame seeds for garnish.
